You can often hear that fast food is bad for health and digestion, promotes overweight. In fact, those who mean burgers and hot dogs, french fries and other cafe dishes say so. fast food. But fast food is just fast food, and it doesn’t have to be fatty, unhealthy or high-calorie. Dishes from thin lavash are fast food, but they can be both hearty and high-calorie, as well as light: for vegetarians and diet menus. This article contains the best recipes for every taste from what you can stuff thin pita bread with photos and detailed explanations step by step preparation.

What kind of lavash is worth taking?

To start pita bread at home with something from the available products in the refrigerator, you must immediately select the right main ingredient. Lavash is different: Armenian - thin, often rectangular in shape and Georgian - more magnificent, round. Tortilla, unleavened bread in the form of a flatbread, is a close relative of pita bread from Mexico, and the Indian chapati flatbread is the same pita bread, only fried in a dry frying pan.

For the preparation of various rolls, rolls, pies and snacks based on lavash, it is usually used Armenian lavash, and how to start it and how to do it correctly is described below. It is worth noting that it is necessary to buy lavash as fresh as possible and store it tightly packed before cooking, as it dries very quickly in air and begins to break and crumble when rolled up.

Do not forget that if the filling in pita bread is rather soft and generously flavored with sauces, such a dish is served immediately or no later than ten minutes after cooking, otherwise the dough will get wet and tear. If the appetizer was prepared for yourself, it is inconvenient to eat, but not scary, and if this is a festive dish, it will be extremely embarrassing in front of the guests.

If there is a lot of greenery in the filling: Beijing cabbage, sweet pepper or parsley - such options can keep their integrity longer, which means they are convenient to take on the road, as a snack for work or school, as well as for a picnic. Lavash stuffed with meat and sausage, cheese is very convenient to take where there is a microwave - to warm up a snack.

What can be stuffed with lavash?

An impromptu dish, which is prepared in a matter of minutes almost anywhere (if only there were products), has long been to the taste of not only fast food lovers, but also the ever-busy employees, students and even people leading healthy lifestyle life. There are more than enough recipes for stuffing pita bread:

  • Crab sticks with boiled eggs and dill: a classic and favorite option for many. Grate the sticks, mix with chopped dill and eggs, lightly flavor with sour cream or mayonnaise. Wrap the resulting salad in pita bread and let it soak for 10-15 minutes.
  • The classic version of homemade shawarma: pieces of boiled meat or fried in a pan until cooked, season with spices and spread on the surface of pita bread, lightly greased with ketchup or mayonnaise, put Korean carrots or fresh cabbage salad in a wide strip on top of it, circles of fresh or pickled cucumbers, pour a small amount of ketchup or mustard and wrap it in an envelope and warm it up a little in the oven or microwave. The family will be delighted.
  • Finely chopped sausage, mixed with Korean carrots or fresh tomatoes, chopped into strips and mayonnaise - tastes very similar to the hot dog so beloved by everyone, but due to thin pita bread made from yeast-free dough, it is a less high-calorie dish.
  • Korean-style carrots with pita bread are the basis for many options and variations on the shawarma theme: from meat to vegetarian. It is worth experimenting with different combinations to find something unique and pleasing to your taste.
  • Chinese cabbage with thin slices of salami, seasoned with spicy ketchup - it's Mexican hot and quite satisfying.
  • Vegetarian option: lots of chopped dill, parsley, mixed with cottage cheese and a pinch of salt.

This list can be continued indefinitely, because there are a lot of ideas about how to stuff thin pita bread, so let's dwell on the most interesting ones in more detail.

Instead of dinner

Sometimes it happens that there is no time or energy for cooking, the family is persistently waiting, and there is nothing in the refrigerator except for eggs, mushrooms and dried Druzhba cheese. This is a great opportunity to stuff pita bread, which will be incredibly happy for the male part, because they are so greedy for all sorts of fast foods. Finely chop the mushrooms and fry in vegetable oil with onions until golden brown, be sure to season with black pepper and, of course, do not forget to salt. If there are pickled cucumbers - excellent! They will also go into action and emphasize the mushrooms.

On the spread out pita bread, we make small strips of mayonnaise, spread them over the surface and sprinkle with grated cheese, over which we pour evenly ready mushrooms. On the narrow side of the pita bread, we lay out cucumber circles in a row and wrap them in an envelope, making sure that the filling is tightly held inside, if necessary, you can chip it with wooden toothpicks. In a dry frying pan and low heat, slightly warm the resulting pie and call our household members. They will be delighted with melted cheese mixed with mushroom filling and crispy crust of thin pita bread. If there is also sausage lying around in the refrigerator, cut it into slices and send it to the mushrooms, no one will be against it.

holiday rolls

Even for a festive table, you can think of how to stuff pita bread, so that the appetizer from it looks like a king, and overshadows all other dishes with taste. For this we need:

  • Fillet of red fish: slightly salted or lightly smoked.
  • Fresh cucumber.
  • Lettuce or Beijing cabbage.
  • 1 double lavash.
  • Mayonnaise for a bunch of ingredients.

We cut the fillet into thin small pieces, the cucumber into strips (the skin does not need to be peeled) or very thin circles, thoroughly wash the greens and dry them. Lettuce can be left whole, and Chinese cabbage is chopped, removing the thick parts of the leaves. Lubricate the pita bread spread on the table with mayonnaise, spread the pieces of fish on it in a thin layer, sprinkle cucumbers on top, and greens on them.

We roll the roll tightly, for this purpose you can use cling film, then the pita rolls up easily, and the filling remains in place. We place the resulting rolls in the refrigerator for half an hour, and then cut obliquely with a sharp knife. You can decorate with sliced fresh tomatoes or radishes, forming roses, around which it is beautiful to lay cooked rolls with fish.

Lavash "Guests on the doorstep"

What is delicious to stuff pita bread if guests suddenly appear on the doorstep? There is no time for long-term preparation of salads and snacks, but I really want to surprise with my culinary skills and create a delicious dish out of nothing. To prepare delicious rolls, you need to take:

  • one jar of canned food in oil: pour excess liquid into a cup, and knead the contents of the jar with a fork;
  • four boiled eggs grate on a coarse grater;
  • Grate 200 grams of any cheese;
  • Chop 2-3 cloves of garlic and mix with a pinch of black pepper and 3-4 tbsp. spoons of mayonnaise.

How can you stuff pita bread if there was no canned food in the oil? They can be replaced with sprats or pieces of smoked fish, chopped finely. Of course, with canned fish it’s easier and faster, even tastier, but sometimes circumstances are stronger, so we use what we have and don’t worry - the result will be impressive. You can see that the ingredients of the filling resemble the composition of the Mimosa salad, so beloved by fans of puff salads. Here, according to their principle, we prepare a pita roll, laying out the ingredients in layers.

Rolls with cheese

How to stuff thin pita bread if you don’t feel like meat or seafood at all, you are already tired of spicy additives, and green leafy vegetables are not available due to weather restrictions? Everyone's favorite cheese of various varieties will come to the rescue: from inexpensive processed and smoked, to fragrant Dutch, tender brie or light mozzarella.

The cheese is rubbed on a coarse grater or cut into thin strips, an additive is selected for it to taste:

  • boiled eggs cut into strips go well with the Dutch variety;
  • mushrooms fried in oil, mashed in a blender and flavored with a clove of garlic for flavor;
  • slices of red fish fillet: salmon, salmon or pink salmon;
  • slices of fresh tomatoes, mixed with fragrant basil leaves; this option is especially good with mozzarella.
  • garlic mixed with mayonnaise; such a combination with cheese is the well-known "Jewish snack", which is often stuffed not only with pita bread, but also with boiled eggs.

Mayonnaise is spread on pita bread with a thin layer, generously sprinkled with cheese, and an additive chosen as an additive is placed on the thin edge of the base. Roll the pita bread into a tight roll and place in the refrigerator for half an hour, then it will become softer, saturated with the taste of the filling. Before serving, cut diagonally into small slices and arrange picturesquely on a plate, decorating with fresh vegetables.

Lavash vegan: with spinach and tomatoes

How easy and tasty to stuff pita bread if you do not eat animal products? These respected people also have their own niche in cooking, which carefully takes into account all the wishes and preferences. Of course, pita bread with fresh vegetables is ideal for vegans: spread the pita bread on the table and grease its entire surface with any cold-pressed vegetable oil, such as sesame or olive oil. Now you can often find spiced oils in the vegan departments, already ready for dressing salads - you can apply them. You can also use vegan mayonnaise, which is made from soy milk, or avocado hummus, instead of butter.

Rinse fresh spinach under running water and shake vigorously to remove excess water, or pat dry with paper towels. We cut the leaves into wide strips, although you can put them whole - the taste does not suffer from this, and it’s easier to stuff pita bread than with small pieces. Cut a fresh tomato into thin slices or wide strips, tofu cheese into thin slices or sticks. Put spinach on one side of the pita bread, put a layer of tomatoes on it and sprinkle with chopped tofu on top. Roll the pita tightly into a roll and immediately start eating it, because it is incredibly tasty and healthy.

Another Vegan Recipe

This option is good for picnics when there is a vegan among friends. How pleasant it will be for him when he finds out that you have reckoned with his worldview and prepared a shawarma especially for him. Knowing that pita bread is often smeared with mayonnaise or sour cream, you need to prepare a replacement for it, because vegans do not use such products. How to stuff thin pita bread, which is dry without these additives? There is an alternative: it is necessary to soak half a glass of peeled sunflower seeds in water, and after three hours grind it with a blender into a puree, while rinsing or draining the remaining water is not necessary. Add to the mass 1 tbsp. a spoonful of lemon juice, a little salt to taste and a crushed clove of garlic for flavor.

Beat thoroughly with a blender again and taste: why not mayonnaise? We spread it on the unfolded pita bread, thinly sliced avocado slices on it, and on top of them - mugs of fresh cucumber. Lightly salt and roll up the roll, trying to pack it tightly.

Sweet rolls (with photo)

How can you stuff pita bread if you want something sweet, but dietary? You can use cottage cheese filling with fresh berries, for the preparation of which you will need:

  • 200 grams of fresh fat cottage cheese;
  • 1 st. a spoonful of granulated sugar;
  • a pinch of vanilla or grated zest (optional)
  • two handfuls of any fresh berries: raspberries, strawberries, blueberries;
  • one pita bread, which is cut into two parts.

Using a blender, mix the cottage cheese with sugar and vanilla into a fluffy mass. If it is a little dry, then you can add one or two tbsp. tablespoons of sour cream: the mass should be similar to whipped cream, but with small particles cottage cheese. We wash the berries with running water, dry them on a napkin. We cut the large ones into two or four parts, and the small ones, like blueberries and raspberries, go whole. Spread generously on the laid out pita bread with a spoon curd mass, sprinkle abundantly with berries, the number of them is the same as cottage cheese. We turn the pita bread into a roll and send it to the refrigerator for half an hour, then cut it into rolls with a sharp knife and pour berry sauce on serving or put two or three scoops of ice cream. If you want a complete extravaganza of taste, then you can pour over chocolate syrup and sprinkle with chopped walnuts- the kids will be incredibly happy with such a holiday of the stomach.

You can simplify the task, and beat the cottage cheese, along with berries and sugar, with a blender into a uniform cream and spread it on pita bread, wrapping it as usual. When cut, it will not look as tempting as the main option, but it will be easier to cut, and the shape of such rolls will hold better.

By the same principle, you can stuff pita bread with something else from fruits - everything that is at hand: bananas, slices of oranges or mangoes, peaches, apricots. Children love this dish. And they will be happy to cook it on their own, thereby delighting their mother with their culinary talent.

How beautiful to serve a pita roll?

How to start pita bread at home is already clear, but how to serve it in an original way if it is a festive table or a reception of friends, because you can’t just put pita bread wrapped in a tube on the table - you can only do it at a picnic. There are many options for spectacular designs, and all of them depend on the chef's imagination, his ability to experiment and "feel" the cooking process. Here's an example:

  • If a stuffed pita bread keeps its shape well, the filling does not crumble in it, then you can cut it into four parts: you will get columns about 4-5 cm high. Put them on a round dish in the form of a rosette, and between them picturesquely spread sprigs of fresh parsley and lemon slices.
  • Cut the softer roll diagonally into thin slices and arrange on a dish in the form of a peacock's tail, decorating the middle of each slice with an olive.
  • On a round shallow plate, put mugs of chopped pita bread with filling according to the principle of cold cuts, when one piece half overlaps the other. In the center, you can place a slide of Olivier salad, "Squirrels" or from crab sticks (to match the filling in pita bread), - with what the pita bread was stuffed.
  • The photo below gives another interesting idea serving this simple yet delicious appetizer.

Finally, it should be recalled that pita rolls stuffed with various fillings are not stored: they must be cooked enough to be eaten on the same day, because when sauces and products wrapped in pita bread interact, the oxidation process quickly begins, and the product after a few hours (max 12) exposure to fresh air becomes unfit for eating, so be vigilant.

Lavash appetizers are something between a sandwich and a canapé. In addition to salads and hot dishes, lavash rolls with various fillings can be placed on the festive table. Their preparation is a creative and exciting activity, and the abundance of options surprises with its diversity. Lavash snacks are convenient because they can be prepared in advance, and before the guests arrive, all that remains is to cut them. Also, such hearty pita snacks are perfect for a lunch snack and even for breakfast, they are convenient to take with you.

This dish has entered our life recently, but has already firmly won its place on our table. Today I will try to talk about all kinds of fillings for pita snacks and I am sure that you will find interesting recipes for yourself. In this selection, I offer only 13 options for pita snacks, although in fact there are many more. I think we will continue this topic in the future.

Cut vegetables into strips. On the table, unfold a sheet of pita bread, grease it with garlic sauce and put vegetables with chicken fillet on top. I laid out alternately vegetables and meat, in fact, you can mix the filling if desired.

Wrap pita bread with an envelope, like stuffed pancakes.

Try to wrap the shawarma as tightly as possible, so it does not fall apart.

So that the pita bread does not soften from the sauce and vegetable juice, you need to dry the finished shawarma. Fry in a dry frying pan on both sides for no more than 3 minutes.

Lavash roll with cheese and herbs

Insanely light, but very tasty and beautiful snack! Believe me, with such a dish you can surprise even the most demanding gourmets! Soft and juicy Armenian lavash, delicious cheese filling, which is accompanied by a delicate aroma of garlic, and a slight taste of fresh herbs ... Well, who can resist such a treat!

Ingredients:

  • processed cheese - 400-500 g
  • chicken eggs- 4 things.
  • garlic - 3-4 cloves
  • thin lavash (Armenian) - 3 pcs.
  • chopped dill greens - 3 tbsp.
  • head of lettuce - 1 pc.
  • mayonnaise - to taste

Cooking method:

  1. So, first of all, we set the eggs to boil (of course, hard-boiled). Then we cool them and clean them. We rub the peeled eggs on a coarse grater or finely chop them with a knife (or knead with a fork).
  2. After that, grate the processed cheese (or you can crush it with the same fork). We disassemble the lettuce into individual leaves, rinse them thoroughly and dry them (put them on a paper towel). If you wish, you can grind them a little (or just tear them with your hands), however, as a rule, the leaves are laid out whole.
  3. We wash the dill greens very well under running water. cold water(by the way, it doesn’t have to be just dill, you can safely use any of your favorite greens). Dry it and chop finely.
  4. Mix the chopped eggs with melted cheese, then add chopped greens to the cheese-egg mixture. We clean the garlic and chop it very finely (either rub it on a fine grater, or pass it through a garlic press). Then we send it to eggs with cheese and herbs.
  5. After that, we fill the resulting filling with mayonnaise and mix everything very carefully. It should be noted that the more mayonnaise you put in, the better the pita bread will soak and, thus, it will be softer. However, do not overdo it so that your filling simply does not float out of the roll.
  6. Lay out on a comfortable work surface one thin fresh leaf Armenian lavash, and lettuce leaves on it. Now we spread the cheese-egg filling on the salad. Then lay out the next sheet of pita bread and repeat the procedure. Lay out the pita bread again (already the last one), after the greens and the filling.
  7. Next, wrap the pita bread in a roll (try to squeeze it more tightly while twisting). We wrap the finished roll in cling film (foil or a simple plastic bag) and send it to the refrigerator to infuse, for about an hour and a half (or better, for a couple of hours).
  8. Serving a pita roll with melted cheese to the table, cut it into portioned identical pieces (approximately 2-3 centimeters wide) and put them on a beautiful dish that you can decorate with lettuce, herbs, cherry tomatoes or olives.

Lavash rolls with melted cheese and tomatoes

Ingredients:

  • lavash thin 1 piece
  • soft processed cheese 100 g
  • tomato 2 pcs
  • sprigs of parsley and dill 6 pcs
  • vegetable oil
  • 10 g green
  • onion feathers 3 pcs

Cooking method:

  1. This dish is very simple to prepare. For him, we need thin Armenian lavash, it is better to buy lavash in the shape of a rectangle, it looks better in the finished dish, because it has smooth edges and, accordingly, it is more convenient to roll into a roll.
  2. Lavash should be soft and not burnt (this happens), otherwise we will have to fry it anyway, but more on that later. As for cheese, it is better to use processed soft cheese (like Viola, Hochland) with a classic creamy taste.
  3. To begin with, we take our pita bread and spread it over the entire surface (on one side) with a thin layer of cheese (2-3 mm).
  4. Now cut the tomatoes into cubes and finely chop the greens. We spread on the pita bread with cheese, first the tomatoes, then the greens. We spread it over the entire surface of the pita bread, but not in a very thick layer, that is, the pieces of tomato and greens should be fairly free from each other.
  5. We heat the pan with vegetable oil over high heat and spread our roll to fry. Within a few minutes, the roll acquires a golden crust (do not overexpose the pita bread in the pan, it will turn out tough).
  6. As soon as one side is fried, turn the roll over and fry the other side.
  7. Cut the fried roll into portioned mini-rolls and serve. This dish is wonderful both warm and cold. Great for picnics. The taste is soft and creamy with subtle hints of greenery. In short, very tasty, I advise everyone to try.
