  • To avoid making the first pancake lumpy, pour the dough into a well-heated frying pan.
  • Do not be too lazy to sift the flour before kneading the dough - pancakes will be tastier.
  • To avoid lumps, you first need to mix flour, eggs, sugar and salt, and only then add a little liquid.
  • If you don't want to grease the pan every time, add some vegetable oil to the dough.
  • If you cook pancakes with yeast, all ingredients should be at room temperature, and the milk should be slightly warmed up.
  • The pan can be greased with a piece of bacon, and it is convenient to grease it with sunflower oil by pricking half a potato or onion onto a fork. Now many housewives have special silicone brushes for this.
  • Pour the pancake dough into the center of the pan, and then, tilting it in different directions, distribute it evenly throughout the pan.
  • The thinner you want to make the pancakes, the more eggs you use for the dough, then the pancakes can be easily turned over.
  • If you want to cook pancakes faster, fry them in two pans at once.
  • To get openwork pancakes, add sparkling mineral water to the dough.
  • Pancakes will turn out to be much softer and tastier if each pancake is greased with melted butter.

The classic and most common recipe for pancakes made with wheat flour and milk is popular at Shrovetide. Traditionally in Russia they were treated to such pancakes with sour cream, butter, black and red caviar (I remembered the film by N. Mikhalkov "The Barber of Siberia").

Since then, many different recipes for pancakes and pancakes have appeared, an abundance of fillings and cooking methods.

The most common classic pancakes are thin pancakes with milk.

Pancakes with milk. Recipe for thin pancakes with holes

Ingredients:

  • milk - 1 liter
  • eggs - 2 pcs.
  • flour - 1 heaped glass (about 270 gr.)
  • sugar - 2 tbsp. l.
  • salt - ½ tsp.
  • soda - ½ tsp.
  • vegetable oil - 3 tbsp. l.

Cooking pancake dough with milk. I advise you to warm up the milk a little. If you knead the dough with cold milk, the pancakes inside will remain moist.

Mix 2 eggs in a separate bowl, add salt, sugar, stir.

In order not to grease the pan every time, pour sunflower oil into the dough, mix well.

The turn has come to add milk to the eggs, first we use about 300 ml of milk.

To avoid lumps, knead a thick dough in this amount of milk, add flour and stir well.

Pour in the remaining milk, stir. The dough should resemble thick sour cream in consistency.

If you leave the kneaded dough for 20 minutes at room temperature, all the components will begin to interact with each other, and the pancakes will spread better in the pan and will not tear when turned over.

Now we fry the pancakes. Grease the pan with lard or sunflower oil, pour the dough into a hot pan in the center. By turning the pan at an angle, spread the dough over the entire surface in a thin layer. Fry pancakes on both sides.

The pancakes are thin and perforated. I like to smear every pancake with melted butter.

Pancakes with sour milk

If suddenly your milk turns sour, it doesn't matter, you can bake equally delicious pancakes.

Ingredients:

  • sour milk - 0.5 liters
  • eggs - 3 pcs.
  • flour - 1.5 cups
  • sugar - 3 tbsp. l.
  • salt - ½ tsp.
  • vegetable oil - 1 tbsp. l.
  • butter - 10 gr.

The recipe for making pancakes from sour milk is similar to pancakes made from fresh milk, only the pancakes are slightly sour, delicious. And sour milk is used in business.

First, stir eggs with sugar and salt, pour in vegetable oil. Pour in 1 glass of sour milk, stir. Pour in flour and stir until the lumps disappear.

Add the rest of the milk, mix and let the dough brew for 15 minutes.

Fry pancakes on both sides in a preheated pan.

Nalistniki with cottage cheese

Nalistniki are the thinnest pancakes stuffed with cottage cheese. These pancakes are not torn and are very tasty.

Ingredients:

  • milk - 1 glass
  • eggs - 1 pc.
  • flour - 1 glass
  • sugar - 2 tsp
  • salt - ½ tsp.
  • vegetable oil - 1 tbsp. l.
  • butter - 10 gr.

We drive in an egg, add salt and sugar.

Pour in milk, stir and then add flour.

Stir until the lumps disappear. Finally, add vegetable oil. Leave the dough to brew for 2 hours.

The dough should be infused for at least 30 minutes, the gluten swells and the pancakes do not tear.

Before baking, add 0.5 cups of warm water to the dough.

In terms of consistency, the dough for the patches should be slightly thicker than milk and spread freely in the pan.

You need to bake such pancakes in an almost dry frying pan, greasing it only for the first pancake with vegetable oil.

Custard pancakes with kefir

I recommend making pancakes using this recipe. They do not differ much from the classic ones in taste, but brewing the dough makes such pancakes softer. In addition, they retain their softness longer than classic ones.

Ingredients:

  • kefir - 0.5 liters
  • eggs - 1 pc.
  • flour - 1 glass
  • sugar - 2 tsp
  • salt - ½ tsp.
  • soda - on the tip of a knife
  • vinegar - ½ tsp.
  • hot water - 50 ml.
  • vegetable oil - 50 gr.

Cooking dough for pancakes with kefir. We drive in an egg, stir.

Pour kefir into the egg, add salt and sugar.

Pour soda into a glass, quench it with vinegar, stir and add to the dough.

Pour in flour and stir the dough well. The dough should be like sour cream. Pour in vegetable oil. At the very end, brew the dough with hot water, adding it to the dough. Stir gently.

We heat a frying pan, grease with lard or vegetable oil and bake pancakes.

Pancakes on the water

These are the simplest and cheapest pancakes. There was no milk or kefir at home? No problem. Use this recipe and add plain water.

Ingredients:

  • water - 600 ml
  • eggs - 3 pcs.
  • flour - 300 gr.
  • sugar - 2 tbsp. l.
  • salt - ½ tsp.
  • soda - ½ tsp.
  • citric acid - ½ tsp.
  • vegetable oil - 1 tbsp. l.

Stir eggs, pour in 500 ml. water, add sugar.

Add citric acid to 100 ml of water, stir.

Pour salt and soda into flour.

Pour flour into the egg mixture, stir well.

Let the dough stand for 20 minutes.

Pour water with citric acid into the dough and stir.

Add vegetable oil at the end. Bake in a preheated pan.

Grease each pancake with butter.

Yeast pancakes

My favorite pancakes are yeast ones. Probably this is from childhood, when mother or grandmother baked such pancakes, it was a celebration of the soul. We were minced with sour cream and cherry jam. Now I restrain myself and try to cook them less often, and all because I can eat a lot of them and the consequences are dire - plus 2-3 kg. Nevertheless, we definitely cook such pancakes for Shrovetide, this is a tribute to a long-standing good tradition.

Ingredients:

  • milk - 300 ml
  • water - 200 ml
  • eggs - 3 pcs.
  • flour - 300 gr.
  • sugar - 2 tbsp. l.
  • salt - 1 tsp
  • yeast - 20 gr.
  • vegetable oil - 5 tbsp. l.

Heat the milk a little, dissolve the yeast in 1 glass of milk, add a little sugar and half the flour.

It is advisable to sift the flour through a sieve, so it is better enriched with oxygen and the yeast will be more active. Stir the dough well. Put a bowl of dough in a warm place for 30 minutes. Separate the whites from the yolks.

Add sugar, yolks, flour, butter and the remaining milk to the matched dough.

Put the dough in the heat for about 1 hour. Add salt to the egg whites and beat until firm. Add the whipped egg whites to the dough and mix gently.

Fry like other pancakes in a hot pan, greasing the pan with lard or vegetable oil.

Pancakes with whey

If you cook fermented milk products at home, then there is always whey, which is often poured out. But delicious pancakes, tasty and delicate, are obtained from it.

There are some secrets of the whey test that I am happy to share.

Warm the whey a little before kneading the dough. It is advisable that all foods are at room temperature.

Pancakes will be more fragrant and airy if you add 1-2 tbsp to the dough. l. cognac.

Ingredients:

  • milk whey - 500 ml
  • eggs - 2 pcs.
  • flour - 250 gr.
  • sugar - 100 gr.
  • salt - 1 tsp
  • soda - 1 tsp.
  • vegetable oil - 3 tbsp. l.

Beat eggs with sugar and salt, add vegetable oil.

Pour in whey, add baking soda and stir the dough well.

Add cognac.

Pour in the sifted flour.

Stir the dough until smooth, it should be like heavy cream and spread well in the pan.

Openwork pancakes in a bottle. Original recipe with beer

Beautiful openwork pancakes are very easy to get if you use a regular plastic bottle. Note to men - want to surprise your beloved on Valentine's Day? This recipe is for you.


Knead the dough immediately in the bottle, and then pour it into the pan.

This recipe is also unusual in that instead of milk we will use unfiltered (live) beer.

Ingredients:

  • beer - 300 ml
  • eggs - 2 pcs.
  • flour - 200 gr.
  • sugar - 1 tbsp. l.
  • salt - 1/2 tsp.
  • soda - 1/2 tsp.
  • sour cream - 1 tbsp. l.
  • vegetable oil - 3 tbsp. l.
  • chocolate

Pour the eggs into a bottle, add sugar and salt. Using a funnel, add flour and, shaking constantly, add beer, sour cream and vegetable oil. Stir well and pour straight from the bottle into a preheated pan in the form of openwork patterns. St. Valentine can be depicted as hearts.

Finally, sprinkle the delicate pancakes with grated chocolate. Beloved (s) will be delighted.

Buckwheat pancakes in a hurry

In addition to wheat, you can use buckwheat flour. Pancakes made from buckwheat flour have a centuries-old tradition in Russia, they were prepared by housewives long before the advent of electric stoves.

These pancakes are slightly darker than wheat flour pancakes. In addition, there is less gluten in buckwheat flour, pancakes can break. Therefore, it is advisable to mix buckwheat flour with wheat flour.

You can cook such pancakes with yeast, but I suggest a quick recipe for pancakes with milk.

Ingredients:

  • milk - 2 glasses
  • eggs - 3 pcs.
  • buckwheat flour - 200 gr.
  • wheat flour - 200 gr.
  • butter - 4 tbsp. l.
  • sugar - 1 tbsp. l.
  • salt - 1/4 tsp
  • citric acid - 1/4 tsp
  • vegetable oil - 3 tbsp. l.

Sift buckwheat and wheat flour through a sieve. Heat the milk a little and gradually, stirring constantly, pour it into the flour. Stir until smooth.

Beat eggs with salt and add to the dough.

In a glass we dilute citric acid with 1 tsp. water, add soda and pour the resulting pop into the dough.

Let the dough stand for 10-15 minutes and bake in a preheated pan.

Buckwheat pancakes are strongly advised to grease with butter.

Pancakes with baked

Pastry is a filling for pancakes, which is baked directly into the pancake, kneading the filling into the dough. Any dough for pancakes can be prepared according to all of the above recipes.

The filling is prepared separately, here are the possible options:

  • cheese with ham;
  • chicken fillet with sun-dried tomatoes;

  • fried meat;
  • grated apples;
  • cottage cheese.

Pour the dough into the pan, put the filling on top and press down with a spatula. Pour some more dough on top. After the bottom is fried, gently turn the pancake over to the other side.

Lush pancakes on kefir

Pancakes are great, but many, especially children, love fluffy, fluffy pancakes, one kind of which drools. Lush pancakes are made with kefir or yeast. I propose a simple and quick recipe - with kefir.

Ingredients:

  • kefir of any fat content - 1 glass
  • eggs - 1 pc.
  • wheat flour - 1 - 1.5 cups
  • sugar - 1 - 2 tbsp. l.
  • salt - 1/4 tsp
  • soda - 1 tsp.
  • vegetable oil - 100 ml.

Sift flour through a sieve.

Add salt, sugar and soda to the flour. We mix.

Pour in kefir and mix again.

We drive in the egg, mix again.

The dough should be like thick sour cream.

Let the dough stand and ripen for 30 minutes.
