Happy Shrovetide!

Pancake Week, Pancake Week, Pancake Maker, Pancake Eater, Obyeduha, Wide Pancake Week ... As soon as the Russian Pancake week was called. And this is far from all the names of the holiday, to which various Slavic villages and peoples gave their colors. There was one thing unchanged in the celebration of the Maslenitsa. Shrovetide was always to be celebrated merrily and noisily.

Pancake pies, pancake salads and even pancake cakes should certainly be served to the pancake table. And on Shrovetide they were special, the recipes of which are also presented at the "Povarenka".

Our people were extremely anxious and enthusiastic about such a holiday as the Russian Shrovetide. Housewives kept traditional family recipes for Shrovetide, children prepared handicrafts and a scarecrow, which was certainly burned at the end of Shrovetide week celebrations, families, friends visited each other, walked around the squares, fairs, organized dances, songs, concerts, and folk festivals. So what are the traditional days of Maslenitsa? How to mark and conduct them correctly?

So, each Shrovetide lasts seven days once a year (until the beginning of the next Great Lent), starting from Monday to Sunday. So the Sunday before Maslenitsa was called "meat". This was the last day that meat was allowed to be eaten. And one could have enough of it that day at a party or at home.

On Monday, the Russian Shrovetide was celebrated with the holiday itself. On this day, it was customary to ride as much as possible from the ice slides - on a sleigh, sled, sled, as well as swing on a swing. It was believed that the higher the celebrants swing, the better the plants will grow next spring.

On the Tuesday of the Maslenitsa, they played merry mass games in the squares and treated themselves to pancakes. This day of Maslenitsa was called "flirting". Wednesday was considered a delicious day. That's when family recipes came in handy (you can find recipes for everything on our website). Everything that the hostess prepared was “tossed” on the table for guests and loved ones.

On Thursday - "take a walk" festivities continued, horseback riding, sleigh rides, fistfights, defenses of the built snow towns. Not a single Russian Shrovetide was complete without a mother-in-law Friday evening. On such days, Slavic sons-in-law visited their mother-in-law's houses, who treated them to homemade pancakes.

The Saturday evening of the Maslenitsa was called "sister-in-law gatherings", during which kindred families visited each other, relatives talked to each other, feasted, and rested with their families.

A special day of the Russian Shrovetide is Forgiveness Sunday. The most frank, most beautiful day of Maslenitsa, during which it was necessary to repent in front of offended people, in front of loved ones, relatives, acquaintances, to ask (but certainly sincerely) all of them for forgiveness and, of course, to forgive in my soul the grievances against them, if any.

Shrovetide is the funniest, brightest and most delicious holiday that marks a farewell to winter. On this day, the spring sun is already warming up, and people, gathering in the squares, are burning a scarecrow of winter. But that's not all. The main thing is the treat. Luxurious pancakes with different fillings and hot strong tea. What else do you need to keep warm and continue the fun ?! And what is cooked for Shrovetide, besides pancakes?

Ancestral traditions

Today they are forgotten. We come across scraps of ancient rituals at weddings, when a child is baptized, but sometimes we don’t think about their meaning. Shrovetide is a very interesting holiday that goes back to the times before Christianity. It is a celebration of the sun, which pancakes represent.

But that's not all. A festive treat on this day is a symbol of fertility and prosperity. That is why so many baked goods are made with a golden warm color. Goodbye cold winter, sunny summer ahead. Today we will take a short excursion into the cooking of our ancestors and find out what is cooked for Shrovetide, except for pancakes.

Variations

Modern housewives no longer want to be limited to pancakes alone, although there are many ways to make the treat interesting and bright here. For example, put mushrooms or caviar as a filling, and collect the pancake in the form of a bag and tie it with a green onion feather. And if you want to be distinguished by originality, then No, not with custard, but with mushrooms and cheese. Of course, next year you will again have to think about what is being prepared for Shrovetide, except for pancakes, but this time you will have an original and bright dish. So, you will need: pre-fried pancakes and hard cheese, sour cream, onions and fresh mushrooms.

Fry onions in a pan, add mushrooms, and when the liquid evaporates, then sour cream. Simmer for 10 minutes. Grate the cheese and immediately divide into 8 parts. Now collect the cake, putting mushrooms and cheese on each pancake. The top layer is decorated with only cheese.

Pancakes

It used to be believed that it is early for a girl to marry until she learns how to bake lush and delicious pancakes. And if you remember what our grandmothers cooked for Shrovetide, in addition to pancakes, then a plate with jam and ruddy pancakes will immediately come to mind. It is not difficult to prepare them, you only need to try them once.

Lazy dumplings

If you are wondering what to cook for Shrovetide, except for pancakes, then you should remember that meat dishes are not welcome these days. But dairy and fish can be eaten in unlimited quantities. If time is short, but you want to treat children to a delicious dessert, then pay attention to the following recipe. It takes 5 minutes to cook and is perfect for breakfast.

  • Place a pack of cottage cheese in a cup. Pound well and add the yolk.
  • Add 100 g flour and a little salt.
  • Stir with a fork until smooth.
  • Boil water and salt.
  • Now scoop up some dough with a wet spoon and gently shake it into the water.
  • Do not close the lid, the products will fall apart with strong boiling.
  • As soon as they come up, stir with a slotted spoon and get out in a minute.

Cheesecake

Let's continue to sort out the dishes for Shrovetide. There are recipes for every taste, and in addition, they can be altered in your own way. The most homemade dish is pie. Remember the agonizing wait while mom is busy in the kitchen, and a delicious smell spreads through the rooms. Finally, the whole family is gathered around the table. Considering what is customary to cook for Shrovetide, this wonderful cake cannot be ignored. You need to prepare:

  • 500 g puff pastry;
  • 500 g of cottage cheese (knead well).
  • Add 2 eggs to the curd.
  • Add salt and a spoonful of sugar on the tip of a knife.

Now comes the fun part. Cut a circle out of the dough along the diameter of the shape, the lid and the side, that is, the strip. Put the bottom in the mold, lay the side and pour the curd filling. It remains to put the lid on top and bake for 40 minutes until golden brown. It is recommended to serve it warm. Guests will be delighted with this simple and delicious cake.

Syrniki

The best dishes for celebrating Maslenitsa are made on the basis of milk and cottage cheese. Why not offer our guests delicious, tender cheesecakes ?! This does not take long and the result is fantastic. Very often, housewives add a little flour so that the baked goods do not fall apart during frying. You will need:

  • Cottage cheese - 0.5 kg, not wet. Add salt on the tip of a knife and 1 teaspoon of sugar.
  • It was the turn of the eggs. Drive in 2-3 pieces.
  • Stir well.
  • Dip the cutlet well in flour and place on hot sunflower oil.
  • Fry in a pan.

Best served warm with sour cream.

Deep fried cheese

Very tasty, but fantastic high-calorie dish. But Shrovetide, there is nothing wrong with that. You need 0.5 liters of butter for breading, 2 raw eggs and a slice of cheese. In addition, you need crackers, oregano, and salt.

The preparation is simple. It is enough to cut the cheese into cubes, beat the eggs a little, add salt. Pour oregano on a dish, do the same with breadcrumbs. Dip the cheese first in oregano, then dip in an egg. Now in breadcrumbs, again in an egg and again in breadcrumbs. Fry the cheese over low heat and serve immediately.

Cheesecakes with cottage cheese

What is Shrovetide without fragrant buns ?! And what should the hostess do if she does not have time? You can make delicious cheesecakes in just a little time. The dough is yeast, but it is not difficult to prepare it. Let's prepare the dough:

  • Heat a glass of milk until warm.
  • Add a little sugar and 30 g of fresh yeast to it.
  • Add 0.5 cups flour and leave for 30 minutes.
  • After that, add two beaten eggs and three glasses of flour to the dough.

Now mix and heat the dough for another 30 minutes. After that, you need to knead the dough well for 15 minutes. Divide the dough into 12 pieces and roll each into a flat cake. For the filling, grind 0.5 kg of cottage cheese, 1 yolk and 3 tablespoons of sugar. Place a spoonful of filling on each tortilla. We bake for 20 minutes at 180 degrees, grease with milk mixed with butter.

But what about the classics

Any of these dishes can decorate the table, but will not replace itself for the whole week, you need to select proven ones, which we will do today. So, first of all, let's try to make thin pancakes. Lacy, with crisp edges, they are popular with both adults and children. Ingredients:

  • 1 liter of milk;
  • 4 eggs;
  • 450 g flour;
  • 2 tablespoons of sugar;
  • 1.5 tablespoons of oil;
  • 0.3 teaspoons of salt;
  • butter for greasing ready-made pancakes.

You will need to prepare the dough. To do this, break eggs into a cup, add salt and sugar. Then add a third of the milk and add all the flour. The dough will turn out like liquid sour cream. It remains to add all the other ingredients. In this case, there will be no lumps.

Pancakes on kefir

If your milk is sour, then don't be upset. After all, you are already making the best pancake recipes. What to cook for Shrovetide, each hostess decides for herself. But the recipe for kefir pancakes will definitely not be superfluous. You will need 2 cups of sour milk, 2 eggs and 2 cups of flour, 3 tablespoons of vegetable oil.

We start by sifting the flour into a large bowl. Add half a teaspoon of salt, a tablespoon of sugar and milk with eggs to it. Wait 30 minutes. After that, dilute a teaspoon of soda with hot water and add to the dough. Bake in a hot skillet.

Instead of a conclusion

Shrovetide is a traditional Russian spring holiday. After a long winter, everyone goes to visit each other and rejoice at the first rays of the sun. Of course, the hostess must prepare for the arrival of guests. For this, traditional dishes are prepared from dairy products. Today we have considered only a small part of what can be prepared for Shrovetide. Based on these recipes, you can come up with a dozen more dishes that will surprise and delight guests.

We cannot do without flour, no matter what pies and pancakes we muddied. We only note that for the preparation of pancakes, a wide variety of types of flour are used - not only wheat, but also, oatmeal, rye... Best of all, in this case, pancakes are obtained from several types of flour, mixed in different proportions ( especially if the main role in this mixture is given to wheat flour), as well as from flour in half with oatmeal.

2. Milk

Buy milk in a bottle, that is, pasteurized, not " long-lasting". If you are going to seriously engage in pancakes and pies, it will take a lot of milk, it will definitely not have time to turn sour.

3. Butter

First, you need butter for the dough. Secondly, you will grease them with freshly fried pancakes stacking them. Thirdly, and this is a very important argument, butter is the most important part of any normal Russian snack - black bread with butter and herring, white bread with butter and caviar, Borodino bread with butter and salmon. Nobody will refuse such a snack, nobody.

The best oil is one that has a shelf life of 3-4 months. By the way, unlike Russian-made butter, most of the butter from Europe is stored for six months, or even a year - and this is alarming.

4. Sour cream

Sour cream is actually the main Russian sauce, either by itself, or salted or sweetened. The last to pancakes, pancakes and cheesecakes will be the very thing.

5. Curd

If there is a desire to make spring rolls, the cottage cheese will be very relevant ( we do not mention meat because those who observe Great Lent refuse meat already in Shrovetide week). Also, on Shrovetide are very good.

6. Eggs

Chicken eggs are also useful for dough, and, possibly, for filling pies - if you decide to cook them with rice or bake them.

7. Vegetable oil

Yarn is a primordially Russian way of frying: cooking in a thick layer of overheated oil, at least one centimeter thick (or even 1.5-2 cm). This is what we mean by the fact that on Shrovetide you can deep-fried brushwood, crumpets and all sorts of other yarn pies. But pancakes can be fried in butter or lard - as you like.
